Ballotines of Smoked Salmon with Fresh Goat Cheese
Ingredients:
- 8 oz fresh goat cheese
- 2 tbsp chopped fresh dill
- 1 tsp lemon zest
- 16 oz smoked salmon
- 2 tbsp chopped chives
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
- Mix the goat cheese, dill, and lemon zest together in a small bowl until well combined.
- On a large piece of plastic wrap, lay out the smoked salmon slices to form a rectangle, slightly overlapping the edges.
- Spoon the goat cheese mixture over the top of the salmon, leaving a border around the edges.
- Carefully roll up the salmon into a tight log using the plastic wrap to help you until the filling is completely wrapped.
- Twist the ends of the plastic wrap tightly and refrigerate the ballotine for at least 2 hours, or overnight.
- When ready to serve, remove the ballotine from the refrigerator and unwrap it from the plastic wrap. Slice it crosswise into rounds.
- Drizzle with lemon juice and sprinkle with chopped chives. Add salt and pepper to taste.
