Blue Cheese and Leek Tart Recipe
Ingredients:
- 1 pre-made pie crust (9-inch)
- 4 leeks, cleaned and chopped
- 3 tbsp unsalted butter
- 4 oz crumbled blue cheese
- 1/2 cup heavy cream
- 2 large eggs, beaten
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Preheat the oven to 350°F (177°C).
- Place the pie crust in a 9-inch tart pan and press it down gently.
- Prick the pie crust with a fork and bake it for 10-12 minutes or until lightly golden.
- While the pie crust is baking, melt the butter in a large skillet over medium heat.
- Add the chopped leeks and cook for 5-7 minutes or until they are soft.

- When the pie crust is done, remove it from the oven and sprinkle half of the blue cheese on the bottom of the crust.
- Add the leeks on top of the blue cheese and pour the egg mixture over the leeks.
- Sprinkle the remaining blue cheese on top.
- Bake the tart for 30-35 minutes or until the filling is set and the top is lightly browned.
- Let the tart cool for a few minutes before removing it from the tart pan.
