Blue Cheese and Leek Tart Recipe

Ingredients:

  • 1 pre-made pie crust (9-inch)
  • 4 leeks, cleaned and chopped
  • 3 tbsp unsalted butter
  • 4 oz crumbled blue cheese
  • 1/2 cup heavy cream
  • 2 large eggs, beaten
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Preheat the oven to 350°F (177°C).
  2. Place the pie crust in a 9-inch tart pan and press it down gently.
  3. Prick the pie crust with a fork and bake it for 10-12 minutes or until lightly golden.
  4. While the pie crust is baking, melt the butter in a large skillet over medium heat.
  5. Add the chopped leeks and cook for 5-7 minutes or until they are soft.
  6. In a small bowl, whisk together the heavy cream, eggs, salt and black pepper.
  7. When the pie crust is done, remove it from the oven and sprinkle half of the blue cheese on the bottom of the crust.
  8. Add the leeks on top of the blue cheese and pour the egg mixture over the leeks.
  9. Sprinkle the remaining blue cheese on top.
  10. Bake the tart for 30-35 minutes or until the filling is set and the top is lightly browned.
  11. Let the tart cool for a few minutes before removing it from the tart pan.
