Bouquets of Poivrade Artichokes
Ingredients:
- 8 small poivrade artichokes
- 1 lemon, cut in half
- 1/4 cup olive oil
- 1/4 cup white wine
- 1/2 cup chicken or vegetable broth
- 1/4 cup chopped parsley
- 2 cloves garlic, minced
- Salt and pepper, to taste
Instructions:
- Preheat oven to 375°F.
- Cut the stem off each artichoke and trim about 1/3 off the top of each artichoke. Using kitchen scissors, trim the tips of the remaining leaves.
- Rub the cut side of the lemon all over the artichokes to prevent them from turning brown.
- In a large baking dish, arrange the artichokes in a single layer.
- In a small bowl, whisk together olive oil, white wine, broth, parsley, garlic, salt, and pepper.
- Pour the mixture over the artichokes, making sure each artichoke is coated with the liquid.
- Cover the dish tightly with aluminum foil, and bake for 45-50 minutes, or until the artichokes are tender and can be pierced easily with a fork.
- Remove from the oven and let cool for a few minutes before serving.
