Bouquets of Poivrade Artichokes

Ingredients:

  • 8 small poivrade artichokes
  • 1 lemon, cut in half
  • 1/4 cup olive oil
  • 1/4 cup white wine
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup chopped parsley
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 375°F.
  2. Cut the stem off each artichoke and trim about 1/3 off the top of each artichoke. Using kitchen scissors, trim the tips of the remaining leaves.
  3. Rub the cut side of the lemon all over the artichokes to prevent them from turning brown.
  4. In a large baking dish, arrange the artichokes in a single layer.
  5. In a small bowl, whisk together olive oil, white wine, broth, parsley, garlic, salt, and pepper.
  6. Pour the mixture over the artichokes, making sure each artichoke is coated with the liquid.
  7. Cover the dish tightly with aluminum foil, and bake for 45-50 minutes, or until the artichokes are tender and can be pierced easily with a fork.
  8. Remove from the oven and let cool for a few minutes before serving.
