Braised snails

Braised Snails Recipe

Ingredients:

  • 1 lb. fresh snails
  • 1/2 cup red wine
  • 1/2 cup beef broth
  • 4 tablespoons butter
  • 4 cloves minced garlic
  • 1 tablespoon chopped fresh thyme
  • Salt and pepper to taste

Instructions:

  1. Clean the snails thoroughly by placing them in a bowl of cold water and letting them soak for 10-15 minutes.
  2. Drain and rinse the snails under cold running water.
  3. In a large sauté pan, melt the butter over medium heat and add minced garlic. Cook until fragrant (about 1 minute).
  4. Add snails to the pan and cook for 5-6 minutes, stirring occasionally.
  5. Stir in red wine, beef broth, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat to low. Cover and let simmer for 20 minutes, or until the snails are tender.
  7. Remove from heat and let rest for 5 minutes before serving.

Serving Suggestions:

Serve the braised snails hot as an appetizer or main course. They can be served on their own or with a side of crusty bread to soak up the flavorful sauce. A garnish of chopped fresh parsley provides a pop of color and freshness. Enjoy!
