Celery, Chestnut and Walnut Soup Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups celery, chopped
  • 2 cups whole, cooked chestnuts
  • 1/2 cup raw walnuts
  • 4 cups vegetable broth
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon nutmeg
  • 1/4 cup heavy cream

Instructions:

  1. In a large pot over medium heat, add olive oil and onion. Sauté for 2-3 minutes or until the onion is soft and translucent.
  2. Next, add minced garlic and celery, sautéing for another 2-3 minutes until the celery is slightly softened.
  3. Add chopped chestnuts, raw walnuts, vegetable broth, salt, black pepper, dried thyme, and nutmeg.
