Celery, Chestnut and Walnut Soup Recipe
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups celery, chopped
- 2 cups whole, cooked chestnuts
- 1/2 cup raw walnuts
- 4 cups vegetable broth
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1/4 teaspoon dried thyme
- 1/4 teaspoon nutmeg
- 1/4 cup heavy cream
Instructions:
- In a large pot over medium heat, add olive oil and onion. Sauté for 2-3 minutes or until the onion is soft and translucent.
- Next, add minced garlic and celery, sautéing for another 2-3 minutes until the celery is slightly softened.
- Add chopped chestnuts, raw walnuts, vegetable broth, salt, black pepper, dried thyme, and nutmeg.
- Bring the mixture to a boil, then reduce heat to medium-low and let it simmer for 15-20 minutes until the celery and chestnuts are very tender.
- Once the soup has finished simmering, remove it from heat and let it cool slightly.
- Transfer the soup to a blender (or use an immersion blender) and blend until smooth, taking care to avoid splatters.
- Return the soup to the pot and add heavy cream. Simmer over low-medium heat for another 2-3 minutes until thick and creamy.
- Season with additional salt to taste if necessary.
- Serve hot, garnished with a sprig of fresh thyme, if desired.
