Ingredients:

  • 8 slices of bread
  • 4 tablespoons butter, divided
  • 4 tablespoons flour
  • 2 cups whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup grated Gruyere cheese
  • 1/2 cup finely chopped fresh spinach
  • 8 thinly sliced ham slices
  • 8 thinly sliced turkey slices
  • 4 tablespoons Dijon mustard

Directions:

  1. Preheat the oven to 400°F.
  2. Toast the bread slices lightly and set aside.
  3. Melt 2 tablespoons of butter in a saucepan over medium heat.
  4. Add the flour and whisk for 1 minute to cook out the flour taste.
  5. Slowly pour in the milk while whisking constantly, then add salt and pepper.
  6. Bring mixture to a simmer and whisk continuously until thickened, about 5 minutes.
  7. Turn off heat and stir in the grated Gruyere cheese and chopped spinach. Mix well until cheese is fully melted.
  8. Spoon a generous amount of the cheese sauce onto each toasted slice of bread.
  9. On top of the cheese sauce, place one slice of ham and one slice of turkey.
  10. Spread 1/2 tablespoon of Dijon mustard on another slice of bread and top the ham and turkey slices.
  11. Brush the top of the sandwich with some melted butter.
  12. Place the sandwiches on a baking sheet and bake in the oven until golden brown, about 10 minutes.
  13. Serve hot alongside a side salad.
