Duck Rillettes Recipe
Ingredients
- 1 lb. duck legs, skin on
- 1/4 cup duck fat
- 1 tbsp. chopped fresh thyme
- 1 tbsp. chopped fresh rosemary
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 1/4 cup dry white wine
- 1 tsp. whole black peppercorns
Instructions
- Preheat oven to 325°F.
- Season the duck legs with thyme, rosemary, salt and pepper.
- Place duck legs in a small baking dish and pour over the duck fat. Cover with foil and bake for 2 hours.
- Remove from oven and allow to cool for 10 minutes. Remove the duck legs from the fat and pull the meat off the bones.
- Place the duck meat in a medium bowl and add the white wine and black peppercorns. Mix thoroughly and season to taste with salt and pepper.
- Transfer to a serving dish and garnish with fresh herbs.
