Duck Rillettes Recipe

Ingredients

  • 1 lb. duck legs, skin on
  • 1/4 cup duck fat
  • 1 tbsp. chopped fresh thyme
  • 1 tbsp. chopped fresh rosemary
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1/4 cup dry white wine
  • 1 tsp. whole black peppercorns

Instructions

  1. Preheat oven to 325°F.
  2. Season the duck legs with thyme, rosemary, salt and pepper.
  3. Place duck legs in a small baking dish and pour over the duck fat. Cover with foil and bake for 2 hours.
  4. Remove from oven and allow to cool for 10 minutes. Remove the duck legs from the fat and pull the meat off the bones.
  5. Place the duck meat in a medium bowl and add the white wine and black peppercorns. Mix thoroughly and season to taste with salt and pepper.
  6. Transfer to a serving dish and garnish with fresh herbs.
