Green Curry with Vegetables: Thai Recipe

Ingredients:

  • 1 tablespoon oil
  • 2 garlic cloves, chopped
  • 1 small onion, chopped
  • 1 tablespoon green curry paste
  • 400 ml coconut milk
  • 2 handfuls of mixed vegetables (baby corn, carrots, green beans, and peppers)
  • 1 fresh lime, juice only
  • 1 handful of fresh basil leaves
  • Salt and pepper, to taste

Instructions:

  1. Heat the oil in a wok or frying pan over medium heat.
  2. Stir in the garlic and onion, and cook for 3 minutes until soft.
  3. Mix in the green curry paste and cook for 1 minute.
  4. Pour in the coconut milk, stirring well to combine.
  5. Add in the mixed vegetables and bring to a boil.
  6. Reduce to a simmer and cook for 15-20 minutes until the vegetables are tender.
  7. Squeeze the lime juice over the curry and add the basil, salt, and pepper.
  8. Serve hot with rice.
