Lamb Curry Recipe

Ingredients:

  • 1 kg lamb, cut into pieces
  • 3 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon garam masala powder
  • 2 tomatoes, finely chopped
  • 1 teaspoon salt, or to taste
  • 2 cups water
  • Fresh coriander, chopped (optional)

Instructions:

  1. Heat oil in a large pot over medium heat. Add cumin seeds and sauté until they begin to splutter.
  2. Add onions and cook until they turn golden brown.
  3. Add the ginger and garlic paste, and cook for 2-3 minutes.
  4. Add coriander powder, turmeric powder, red chili powder, and garam masala. Mix well and cook for 2 minutes.
  5. Add tomatoes and cook for 5 minutes, until they have softened and release their juices.
  6. Add the lamb pieces and cook for 10-12 minutes, until the lamb changes color.
  7. Add water and salt, and mix well. Bring to a boil, then reduce heat and simmer for 30-40 minutes, until the lamb is tender and the curry has thickened.
  8. Garnish with chopped coriander, if desired. Serve hot with rice or naan.
