Ingredients

  • 1 pound elbow macaroni
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 3 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F
  2. Cook the macaroni in a large pot of salted boiling water until al dente. Drain and set aside.
  3. In a separate pot, melt the butter over medium heat. Add the flour and whisk to combine. Cook for 2-3 minutes, stirring constantly.
  4. Add the milk slowly, whisking constantly to prevent lumps from forming. Cook for 5-7 minutes, or until the mixture has thickened.
  5. Add the cheddar cheese, parmesan cheese, salt, and pepper to the pot. Stir until the cheese has melted and the sauce is smooth.

  7. Transfer the mac and cheese to a 9×13 inch baking dish. Sprinkle the top of the mac and cheese with panko breadcrumbs.
  8. Bake for 25-30 minutes or until golden brown and bubbly. Garnish with fresh chopped parsley and serve immediately.
