Mediterranean Chicken Sandwich
Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
- 4 ciabatta buns, sliced
- 4 slices of provolone cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup kalamata olives, pitted and chopped
- 2 cups arugula
Instructions
- Pound the chicken breasts to even thickness.
- In a bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and black pepper.
- Place the pounded chicken breasts in the bowl with the marinade and toss to coat. Cover the bowl and let the chicken marinate for at least 30 minutes.
- Preheat a grill to medium-high heat.
- Remove the chicken breasts from the marinade and discard the leftover marinade.
