Onion Soup: Family Recipe

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 6 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • 6 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 slices of French bread, toasted
  • 1 cup shredded Gruyere cheese

Instructions

  1. In a large pot, melt butter and olive oil over medium heat.
  2. Add onions and garlic, and cook until the onions are caramelized and brown (about 30-40 minutes).
  3. Add flour and stir until well combined with onion mixture.
  4. Pour in beef broth and add bay leaf, thyme, salt, and pepper.
  5. Simmer for 30 minutes, stirring occasionally.
  6. Preheat broiler.
  7. Place 1 slice of toasted French bread in each oven-safe soup bowl.
  8. Ladle soup over the bread in each bowl, until nearly full.
  9. Sprinkle shredded Gruyere cheese on top of the soup in each bowl.
  10. Broil in the oven until cheese is melted and golden brown, about 5-7 minutes.
