Paccheri pasta stuffed with sausage and mushrooms recipe
Ingredients:
- 12 paccheri pasta
- 4 Italian sausages, casings removed
- 1 cup of chopped mushrooms
- 1 cup of ricotta cheese
- 1/2 cup of grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon of olive oil
- 1 garlic clove, minced
- 1 can of diced tomatoes
Directions:
- Preheat oven to 375°F (190°C).
- Cook paccheri pasta according to package instructions until al dente then drain and set aside to cool.
- To make the filling, heat the olive oil in a pan over medium heat, add the minced garlic and cook until fragrant, then add the sausage, stirring occasionally, until browned and cooked. Add the chopped mushrooms and cook until they are soft.
- Remove the pan from heat, add the ricotta cheese, grated Parmesan cheese, salt and pepper to the sausage and mushroom mixture. Mix everything together well.
- Spoon the filling into a piping bag or a plastic sandwich bag with the corner snipped off. Pipe the filling into the paccheri pasta tubes, making sure they are well filled.
- Pour the diced tomatoes into a baking dish that’s large enough to accommodate the pasta, place the stuffed pasta into the dish and pour any remaining filling over the pasta.
- Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes or until pasta is heated through.
- Remove the foil from the dish and bake uncovered for another 10-15 minutes until the cheese turns golden brown and the liquid has reduced.
- Remove from the oven and let it cool for a few minutes. Serve while it is warm.
