Potato Spring Rolls with Crab Recipe

Ingredients:

  • 1 lb. potatoes, peeled and cubed
  • 1 tbsp. vegetable oil
  • 1/2 cup cooked crab meat, chopped
  • 1/2 cup shredded carrots
  • 1/4 cup chopped scallions
  • 2 cloves garlic, minced
  • 1 tbsp. ginger, minced
  • 1 tbsp. soy sauce
  • 1 tbsp. oyster sauce
  • 1 tbsp. cornstarch
  • 1 package spring roll wrappers
  • 1 egg, beaten
  • Vegetable oil for frying

Instructions:

  1. Boil the potatoes until they are soft, then mash them and set them aside.
  2. Heat the vegetable oil in a wok or large frying pan over medium-high heat.
  3. Add the crab meat, shredded carrots, scallions, garlic, and ginger to the wok. Saute for a few minutes until the vegetables are tender.
  4. Add the mashed potatoes, soy sauce, and oyster sauce to the wok. Stir everything together until it is well combined.
  5. Dissolve the cornstarch in a small bowl with 1 tablespoon water. Add this to the wok and stir until everything is coated in a thick sauce and the mixture sticks together well. Remove from heat and let cool slightly.
  6. Lay out a spring roll wrapper on a work surface, with one of the corners facing you. Spoon 1-2 tablespoons of filling onto the wrapper near the bottom corner. Roll the wrapper over the filling, tucking the sides in as you go, to form a tight cylindrical shape. Use the beaten egg to seal the top corner of the wrapper to the body of the roll. Repeat with the remaining wrappers and filling.
  7. Heat enough oil in a wok or deep-fryer to submerge the spring rolls. Fry them in batches until they are crispy and browned, about 4-5 minutes per batch.
  8. Remove the spring rolls from the oil with a slotted spoon and drain them on paper towels.
  9. Serve the potato spring rolls hot, with soy sauce or sweet chili sauce for dipping.
