Queen of Bahia – Regal

Ingredients:

  • 1 lb of shrimp
  • 1/2 cup of coconut milk
  • 1/2 cup of palm oil
  • 4 garlic cloves
  • 1 onion
  • 1 bell pepper
  • 2 tomatoes
  • 2 tbsp of dendê oil
  • Salt to taste
  • 1 tbsp of red pepper flakes (optional)
  • 1/2 bunch of cilantro

Instructions:

  1. Clean the shrimp and set aside.
  2. Peel and chop the onion and garlic cloves.
  3. Cut the bell pepper into thin strips and chop the tomatoes.
  4. In a large sauté pan, heat the palm oil over medium heat. Add the onion and garlic and cook until the onion is translucent.
  5. Add the bell pepper and cook until it begins to soften.
  6. Add the chopped tomatoes and let them cook down until they release their juices.
  7. Add the shrimp, coconut milk, dendê oil, and salt. Stir to combine ingredients.
  8. Cover and let cook for 10-15 minutes, or until the shrimp are fully cooked.
  9. Optional: sprinkle red pepper flakes for added spice.
  10. Chop the cilantro and sprinkle on top of the dish just before serving.
