Quick Moussaka Recipe

Ingredients:

  • 1 lb ground beef or lamb
  • 1 eggplant, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp cinnamon
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. Preheat oven to 350°F (175°C)
  2. Sprinkle eggplant slices with salt and let sit for 10 minutes to eliminate bitterness. Rinse and pat dry with paper towel.
  3. Heat olive oil in a pan and fry the eggplant in batches until lightly browned. Remove from pan and set aside.
  4. In the same pan, cook the ground beef or lamb over medium heat until browned. Add onion and garlic and cook until onions are soft.
  5. Stir in the can of diced tomatoes, oregano, cinnamon, salt and pepper. Simmer for 10 minutes.
  6. Sprinkle breadcrumbs over the bottom of a greased baking dish. Add a layer of eggplant. Pour meat mixture over eggplant. Sprinkle Parmesan cheese over meat mixture. Add another layer of eggplant and sprinkle with Parmesan cheese. Repeat layers.
  7. Top with shredded mozzarella cheese.
  8. Bake in preheated oven for 30 minutes or until cheese is melted and bubbly.
