Quick Moussaka Recipe
Ingredients:
- 1 lb ground beef or lamb
- 1 eggplant, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 tsp dried oregano
- 1 tsp cinnamon
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Olive oil for frying
Instructions:
- Preheat oven to 350°F (175°C)
- Sprinkle eggplant slices with salt and let sit for 10 minutes to eliminate bitterness. Rinse and pat dry with paper towel.
- Heat olive oil in a pan and fry the eggplant in batches until lightly browned. Remove from pan and set aside.
- In the same pan, cook the ground beef or lamb over medium heat until browned. Add onion and garlic and cook until onions are soft.
- Stir in the can of diced tomatoes, oregano, cinnamon, salt and pepper. Simmer for 10 minutes.
- Sprinkle breadcrumbs over the bottom of a greased baking dish. Add a layer of eggplant. Pour meat mixture over eggplant. Sprinkle Parmesan cheese over meat mixture. Add another layer of eggplant and sprinkle with Parmesan cheese. Repeat layers.
- Top with shredded mozzarella cheese.
- Bake in preheated oven for 30 minutes or until cheese is melted and bubbly.
