Roast Pork with Dried Apricots Recipe

Ingredients:

  • 1 pork loin roast (3-4 lbs)
  • 2 cups dried apricots
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F.
  2. In a small bowl, mix together olive oil, garlic, honey, and thyme.
