Salmon Croquettes with Herbs Recipe
Ingredients:
- 1 lb fresh salmon fillet, skin removed
- 4 green onions, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh chives, chopped
- 1/2 cup breadcrumbs
- 1/4 cup mayonnaise
- 1 egg, lightly beaten
- 1 garlic clove, minced
- 1 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions:
- Cut the salmon fillet into small chunks and place in a food processor. Pulse until coarsely ground.
- In a large mixing bowl, combine the ground salmon, green onions, parsley, dill, chives, breadcrumbs, mayonnaise, beaten egg, garlic, salt, and black pepper. Mix well.
- Using your hands, form the salmon mixture into small patties, about 2 inches in diameter and 1/2 inch thick.
- Heat 2 tbsp olive oil in a non-stick skillet over medium-high heat.
