Salmon Croquettes with Herbs Recipe

Ingredients:

  • 1 lb fresh salmon fillet, skin removed
  • 4 green onions, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh chives, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1 egg, lightly beaten
  • 1 garlic clove, minced
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions:

  1. Cut the salmon fillet into small chunks and place in a food processor. Pulse until coarsely ground.
  2. In a large mixing bowl, combine the ground salmon, green onions, parsley, dill, chives, breadcrumbs, mayonnaise, beaten egg, garlic, salt, and black pepper. Mix well.
  3. Using your hands, form the salmon mixture into small patties, about 2 inches in diameter and 1/2 inch thick.
  4. Heat 2 tbsp olive oil in a non-stick skillet over medium-high heat.
  5. Cook the salmon croquettes for 2-3 minutes on each side, until golden brown and cooked through.
  6. Transfer the croquettes to a paper towel-lined plate to drain excess oil.
