Savory Cannelés Recipe
Ingredients:
- 1 cup all-purpose flour

Instructions:
- Preheat oven to 400°F (205°C).
- In a large bowl, combine flour, salt, black pepper, paprika, thyme, Parmesan cheese, and Gruyere cheese. Mix well.
- In a skillet, sauté diced pancetta or bacon until crispy. Drain the excess fat and add it to the bowl with the flour mixture. Mix well.
- In a separate bowl, whisk eggs and egg yolk together.
- Gradually pour the milk and melted butter into the egg mixture while whisking constantly.
- Add the liquid mixture to the bowl with the flour mixture. Stir until well combined.
- Cover the batter with plastic wrap and refrigerate for at least 1 hour, or up to 12 hours.
- Grease the cannelé molds with butter or non-stick cooking spray.
- Pour the batter into the molds, filling them about 3/4 full.
- Bake for 20-25 minutes, until the edges are dark brown and crispy and the centers are soft and moist.
- Cool for a few minutes, then remove the cannelés from the molds and serve warm or at room temperature.
