Savory Cannelés Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 tsp dried thyme
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated Gruyere cheese
  • 1/2 cup diced pancetta or bacon
  • 2 eggs
  • 1 egg yolk
  • 1 1/2 cups whole milk
  • 2 tbsp melted butter
  • Butter or non-stick cooking spray for the molds

Instructions:

  1. Preheat oven to 400°F (205°C).
  2. In a large bowl, combine flour, salt, black pepper, paprika, thyme, Parmesan cheese, and Gruyere cheese. Mix well.
  3. In a skillet, sauté diced pancetta or bacon until crispy. Drain the excess fat and add it to the bowl with the flour mixture. Mix well.
  4. In a separate bowl, whisk eggs and egg yolk together.
  5. Gradually pour the milk and melted butter into the egg mixture while whisking constantly.
  6. Add the liquid mixture to the bowl with the flour mixture. Stir until well combined.
  7. Cover the batter with plastic wrap and refrigerate for at least 1 hour, or up to 12 hours.
  8. Grease the cannelé molds with butter or non-stick cooking spray.
  9. Pour the batter into the molds, filling them about 3/4 full.
  10. Bake for 20-25 minutes, until the edges are dark brown and crispy and the centers are soft and moist.
  11. Cool for a few minutes, then remove the cannelés from the molds and serve warm or at room temperature.
