Strawberry and pastry cream tarts

Strawberry and Pastry Cream Tarts Recipe

Ingredients

  • 1 package of 9-inch pre-made pie crusts (2 crusts per package)
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 4 egg yolks
  • 2 cups milk
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 pint fresh strawberries, hulled and sliced

Instructions

  1. Preheat oven to 375°F.
  2. Roll out pie crusts onto a lightly floured surface. Cut circles out of the crust using a cookie cutter or a glass that is slightly larger than the size of the tart tins. Press the circles into the greased tart tins and trim the edges. Bake the crusts in the preheated oven for 10-12 minutes or until golden brown. Allow the crusts to cool completely.
  3. In a medium saucepan, whisk together the sugar, cornstarch, salt, egg yolks, and milk. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil, about 10-12 minutes. Remove from heat.
  4. Stir in the butter and vanilla extract until the butter melts and is fully incorporated. Allow the pastry cream to cool to room temperature.
  5. Spread a layer of the pastry cream into each of the cooled tart shells. Arrange the sliced strawberries on top of the pastry cream.
  6. Refrigerate the tarts for at least 1 hour, or until the pastry cream is set.
  7. Serve chilled. Enjoy!
