Tempura sage leaves


Tempura Sage Leaves

Ingredients:

  • 12-15 fresh sage leaves
  • 1/2 cup all-purpose flour
  • 1/2 cup cold water
  • 1 egg yolk
  • 1/4 teaspoon salt
  • Oil for frying (vegetable, canola or peanut oil works well)

Instructions:

  1. Rinse and dry the sage leaves.
  2. In a bowl, mix together flour and salt.
  3. Add in the cold water and egg yolk to the bowl. Whisk together until there are no lumps.
  4. Heat about 1 inch of oil in a frying pan to 375 degrees Fahrenheit. You can use a thermometer to ensure the oil is at the correct temperature.
  5. Working in batches, dip each sage leaf into the batter and coat completely.
  6. Carefully place the leaves into the oil and fry for about 1-2 minutes until golden brown. Flip halfway through to cook both sides.
  7. Using a slotted spoon, remove the leaves from the oil and place them on a paper towel to drain any excess oil.
  8. Repeat with the remaining sage leaves until all are fried.

Serve hot as an appetizer or garnish for main dishes.
