Tiramisù with Amaretti Recipe
Ingredients
- 500g mascarpone cheese
- 4 eggs, separated
- 100g caster sugar
- 200g amaretti biscuits
- 1 cup strong coffee, cooled
- 2 tbsp amaretto liqueur
- cocoa powder for dusting
Instructions
- In a large mixing bowl, beat the egg yolks with the caster sugar until pale and creamy.
- Add the mascarpone cheese to the bowl and mix well until smooth.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the mascarpone mixture until well combined.
- In a shallow dish, mix together the cooled coffee and amaretto liqueur.
- Dip each amaretti biscuit into the coffee mixture briefly, and then arrange them in a single layer in the bottom of a 20cm square dish.
- Spoon half of the mascarpone mixture over the layer of amaretti biscuits, and spread it evenly with a spatula.
- Repeat with another layer of coffee-dipped amaretti biscuits, followed by the remainder of the mascarpone mixture.
- Refrigerate the tiramisù for at least 4 hours, or overnight, to allow it to set.
- Before serving, dust the top of the tiramisù generously with cocoa powder.
- Cut into squares and serve chilled.
