Turkey and Button Mushroom Pie

Ingredients:

  • 1 turkey breast, skinless and sliced
  • 1 cup button mushrooms, sliced
  • 2 cloves of garlic, minced
  • 1 onion, chopped
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon flour
  • 1/2 cup chicken stock
  • 1/2 cup heavy cream
  • 1 pie crust
  • 1 egg, beaten

Instructions:

  1. Preheat oven to 375°F/190°C.
  2. In a pan, heat up some oil. Add garlic and onion and sauté until onion is translucent.
  3. Add sliced mushrooms and cook for 5 minutes. Remove from the pan and set aside.
  4. Season turkey slices with thyme, sage, salt and pepper. Add them to the same pan and cook them until they are browned and no longer pink in the middle.
  5. Sprinkle flour over the turkey and stir until it’s all coated. Add chicken stock and heavy cream and stir until the sauce thickens.
  6. Fold in the mushroom mixture.
  7. Place pie crust into a greased 9-inch pie dish. Pour turkey mixture over the crust.
  8. With a brush, apply the beaten egg to seal the edges.
  9. Bake the pie for 25-30 minutes or until the crust is golden brown.
  10. Remove the pie from oven and let it rest for 5 minutes before slicing and serving.
