Alsatian Hotpot Recipe

Ingredients:

  • 1 lb. boneless pork shoulder, cut into 1-inch cubes
  • 2 cups sauerkraut, drained and rinsed well
  • 4 medium potatoes, peeled and sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp. dried thyme
  • 1 tbsp. all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup dry white wine
  • 3 tbsp. olive oil
  • 1 tbsp. butter
  • Salt and pepper to taste

Method:

  1. Preheat the oven to 350°F (180°C).
  2. Heat the olive oil and butter in a large, oven-safe pan over medium-high heat. Add the pork and cook until browned on all sides. Remove the pork from the pan and set aside.
  3. Add the onions and garlic to the same pan and cook until the onions are translucent.
  4. Stir in the flour and cook for 2 minutes.
  5. Add the sauerkraut, potatoes, thyme, chicken broth, white wine, salt, and pepper. Mix well.
  6. Return the pork to the pan and arrange the ingredients in an even layer.
  7. Cover the pan with a tight-fitting lid or aluminum foil and bake in the preheated oven for 1 1/2 to 2 hours, or until the pork is tender.
  8. Remove the lid or foil and bake for an additional 10 to 15 minutes, or until the top is golden brown.
  9. Serve hot, garnished with fresh thyme, if desired.
