Alsatian Hotpot Recipe
Ingredients:
- 1 lb. boneless pork shoulder, cut into 1-inch cubes
- 2 cups sauerkraut, drained and rinsed well
- 4 medium potatoes, peeled and sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tbsp. dried thyme
- 1 tbsp. all-purpose flour
- 1 cup chicken broth
- 1/2 cup dry white wine
- 3 tbsp. olive oil
- 1 tbsp. butter
- Salt and pepper to taste
Method:
- Preheat the oven to 350°F (180°C).
- Heat the olive oil and butter in a large, oven-safe pan over medium-high heat. Add the pork and cook until browned on all sides. Remove the pork from the pan and set aside.
- Add the onions and garlic to the same pan and cook until the onions are translucent.
- Stir in the flour and cook for 2 minutes.
- Add the sauerkraut, potatoes, thyme, chicken broth, white wine, salt, and pepper. Mix well.
- Return the pork to the pan and arrange the ingredients in an even layer.
- Cover the pan with a tight-fitting lid or aluminum foil and bake in the preheated oven for 1 1/2 to 2 hours, or until the pork is tender.
- Remove the lid or foil and bake for an additional 10 to 15 minutes, or until the top is golden brown.
- Serve hot, garnished with fresh thyme, if desired.
