Andouillette de Troyes with Old-fashioned Mustard Sauce Recipe

- 1 onion, chopped
- 1 garlic clove, minced
- 1 tsp. allspice
- 1 tsp. salt
- ½ cup dry white wine
- 1 cup chicken stock
- 1 tbsp. Dijon mustard
- 1 tbsp. whole grain mustard
- 2 tbsp. heavy cream
Instructions:
- Preheat your grill to medium-high heat.
- Cut lengthwise slits in the sausages without cutting all the way through. This will allow for even cooking and prevent them from bursting open. Brush them with oil.
- Grill the sausages for about 10 minutes, turning regularly until they are nicely browned on all sides. Remove from the heat and let them rest for a few minutes.
- Meanwhile, in a saucepan over medium heat, cook the onions and garlic in oil until tender. Add allspice and salt and cook for an additional minute.
- Pour in the white wine and chicken stock and let simmer for 5 to 6 minutes or until the liquid is reduced by half. Set aside.
- In a small bowl, mix the Dijon mustard, whole grain mustard, and heavy cream. Add the mustard mixture to the saucepan with the onion and garlic. Cook over low heat for 3-4 minutes, stirring occasionally, until the sauce has thickened.
- Serve the grilled Andouillette sausages with the old-fashioned mustard sauce.
