Aperitif Shortbread Recipe

Ingredients:

  • 1 cup unsalted butter, room temperature
  • 1/3 cup cornstarch
  • 1/2 cup icing sugar
  • 1/2 tsp salt
  • 1 1/2 cups all purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp ground black pepper
  • 1/4 tsp cayenne pepper

Instructions:

  1. Preheat the oven to 350 degrees F (180 degrees C).
  2. In a mixing bowl, cream together the butter, cornstarch, icing sugar, and salt until light and fluffy.
  3. Sift the flour and add it to the butter mixture along with the Parmesan cheese, black pepper and cayenne. Mix until the dough is fully combined.
  4. Roll the dough out into a 1/4-inch thick circle and place it onto a baking sheet lined with parchment paper.
  5. Use a cookie cutter to cut out shapes from the dough or use a knife to cut into small pieces. Prick the dough with a fork all over the surface.
  6. Bake for 15-20 minutes, or until the edges are lightly golden brown.
  7. Remove from the oven and let cool completely before serving.
