Apple and Muesli Cake
Ingredients
- 2 cups of muesli
- 2 eggs
- 1 teaspoon of cinnamon
- 1 cup of brown sugar
- 3/4 cup of vegetable oil
- 1 teaspoon of vanilla extract
- 2 cups of diced apples
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 2 cups of flour
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch by 13-inch (23cm x 33cm) baking dish.
- In a large bowl, mix together the muesli, cinnamon, brown sugar, vegetable oil, vanilla extract and eggs. Mix well!
- In a separate smaller bowl, mix together flour, baking soda and salt.
- Add the dry ingredients to the wet ingredients in portions, mixing well, until completely blended.
- Fold the two cups of diced apple into the mixture, stirring gently. This will make sure the apple does not turn to mush.
- Spread the batter evenly into the prepared baking dish.
- Bake in the preheated oven for 40 – 45 minutes, or until a toothpick or knife inserted into the center comes out clean.
- Let the cake cool down until it reaches room temperature, then cut into slices and serve.
