Apple and Muesli Cake

Ingredients

  • 2 cups of muesli
  • 2 eggs
  • 1 teaspoon of cinnamon
  • 1 cup of brown sugar
  • 3/4 cup of vegetable oil
  • 1 teaspoon of vanilla extract
  • 2 cups of diced apples
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 2 cups of flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch by 13-inch (23cm x 33cm) baking dish.
  2. In a large bowl, mix together the muesli, cinnamon, brown sugar, vegetable oil, vanilla extract and eggs. Mix well!
  3. In a separate smaller bowl, mix together flour, baking soda and salt.
  4. Add the dry ingredients to the wet ingredients in portions, mixing well, until completely blended.
  5. Fold the two cups of diced apple into the mixture, stirring gently. This will make sure the apple does not turn to mush.
  6. Spread the batter evenly into the prepared baking dish.
  7. Bake in the preheated oven for 40 – 45 minutes, or until a toothpick or knife inserted into the center comes out clean.
  8. Let the cake cool down until it reaches room temperature, then cut into slices and serve.
