Apple Chutney Recipe: Anti-Waste Recipe

Ingredients:
- 4 green apples, peeled, cored and diced
- 1 red onion, diced
- 2 garlic cloves, minced
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 1 tsp grated ginger
- 1 tsp mustard seeds
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- Salt and black pepper to taste
- 2 tbsp olive oil
Instructions:
- In a saucepan, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.
- Add the diced apples to the saucepan and stir until they are coated in the oil and cooked for about 5 minutes.
- Add the apple cider vinegar, brown sugar, grated ginger, mustard seeds, cinnamon, cloves, salt and black pepper to the pan and stir to combine.
- Cook for another 10 minutes, stirring occasionally, until the apples are soft and the mixture has thickened.
- Remove from heat and let it cool.
- Transfer the chutney to a sterilized jar and store in the fridge for up to a month.
