Apple Chutney Recipe: Anti-Waste Recipe

Ingredients:

  • 4 green apples, peeled, cored and diced
  • 1 red onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tsp grated ginger
  • 1 tsp mustard seeds
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions:

  1. In a saucepan, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.
  2. Add the diced apples to the saucepan and stir until they are coated in the oil and cooked for about 5 minutes.
  3. Add the apple cider vinegar, brown sugar, grated ginger, mustard seeds, cinnamon, cloves, salt and black pepper to the pan and stir to combine.
  4. Cook for another 10 minutes, stirring occasionally, until the apples are soft and the mixture has thickened.
  5. Remove from heat and let it cool.
  6. Transfer the chutney to a sterilized jar and store in the fridge for up to a month.
