Apple, Leek, Celery and Crabmeat Salad
Ingredients
- 2 leeks, diced
- 2 stalks of celery, diced
- 2 apples, cored and diced
- 1 pound of fresh crabmeat
- 4 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Start by preparing the leeks. Slice off the dark green parts, then halve lengthwise and thinly slice the white and light green parts of the leeks. Rinse well and pat dry with paper towels.
- In a large mixing bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt and pepper until well combined.
- Add the leeks, celery, and apples to the mixing bowl and toss everything together until well coated with the dressing.
- Drain crabmeat and add to the bowl. Gently toss everything together until ingredients are well-combined.
- Refrigerate for at least 30 minutes before serving.
