Apricot Cake Recipe

Ingredients:

  • 1 cup dried apricots
  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions:

  1. Preheat oven to 350°F and grease an 8-inch cake pan with butter or cooking spray.
  2. In a small bowl, combine the dried apricots and boiling water. Let it soak for 10-15 minutes. Strain the water and using a blender or food processor, puree the apricots until smooth. Add baking soda into the mixture and let it sit while you prepare the rest of the ingredients.
