Apricot Tart Recipe

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup powdered sugar
  • 1-2 tablespoons ice water
  • 6-8 fresh apricots, pitted and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, mix the flour and powdered sugar.
  3. Using your fingers or a pastry cutter, blend the butter into the flour until it looks like coarse sand.
  4. Add ice water, one tablespoon at a time, until the dough comes together and forms a ball.
  5. Roll the dough out onto a floured surface. Transfer the dough onto a 9-inch tart pan. Press the dough onto the bottom and sides of the pan and trim off any excess dough.
  6. In a mixing bowl, toss the sliced apricots, granulated sugar, cornstarch, cinnamon, and vanilla extract together.
  7. Arrange the apricots on top of the tart crust in a circular pattern.
  8. Brush the beaten egg onto the edges of the tart crust.
  9. Bake the tart for 30-35 minutes or until the crust is golden brown and the apricots are tender.
  10. Let the apricot tart cool for 15-20 minutes before slicing and serving.
