Apricot Tart Recipe
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup powdered sugar
- 1-2 tablespoons ice water
- 6-8 fresh apricots, pitted and sliced
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- 1 egg, beaten
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, mix the flour and powdered sugar.
- Using your fingers or a pastry cutter, blend the butter into the flour until it looks like coarse sand.
- Add ice water, one tablespoon at a time, until the dough comes together and forms a ball.
- Roll the dough out onto a floured surface. Transfer the dough onto a 9-inch tart pan. Press the dough onto the bottom and sides of the pan and trim off any excess dough.
- In a mixing bowl, toss the sliced apricots, granulated sugar, cornstarch, cinnamon, and vanilla extract together.
- Arrange the apricots on top of the tart crust in a circular pattern.
- Brush the beaten egg onto the edges of the tart crust.
- Bake the tart for 30-35 minutes or until the crust is golden brown and the apricots are tender.
- Let the apricot tart cool for 15-20 minutes before slicing and serving.
