Artichoke Soup Recipe

Ingredients

  • 3 large artichokes, cleaned and trimmed
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 lemon, juiced
  • Salt and pepper, to taste
  • Fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, and sauté until soft and fragrant.
  3. Add artichokes, and sauté for another 5 minutes.
  4. Add vegetable broth, and bring to a boil. Reduce heat to low, and let simmer for 20 minutes or until artichokes are tender.
  5. Let soup cool to room temperature, and then puree in a blender until smooth.
  6. Return soup to the pot, and warm over medium heat.
  7. Add lemon juice and salt and pepper to taste, and simmer for another 5 minutes.
  8. Serve soup hot, garnished with chopped parsley.
