Artichoke Soup Recipe
Ingredients
- 3 large artichokes, cleaned and trimmed
- 3 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 lemon, juiced
- Salt and pepper, to taste
- Fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, and sauté until soft and fragrant.
- Add artichokes, and sauté for another 5 minutes.
- Add vegetable broth, and bring to a boil. Reduce heat to low, and let simmer for 20 minutes or until artichokes are tender.
- Let soup cool to room temperature, and then puree in a blender until smooth.
- Return soup to the pot, and warm over medium heat.
- Add lemon juice and salt and pepper to taste, and simmer for another 5 minutes.
- Serve soup hot, garnished with chopped parsley.
