Asparagus and Pea Pasta Salad Recipe

Ingredients

  • 1 pound farfalle pasta
  • 1 pound asparagus, trimmed and cut into 2-inch pieces
  • 1 cup frozen peas, thawed
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the farfalle pasta and cook until al dente, following package directions.
  3. During the last 3 minutes of cooking time, add the asparagus to the pot with the pasta and cook until tender but still crisp.
  4. Drain the pasta and asparagus, and rinse under cold water to stop the cooking process.
  5. In a large serving bowl, combine the pasta and asparagus with the thawed peas, parsley, and mint.
  6. In a small bowl, whisk together the olive oil, lemon juice, and garlic.
  7. Pour the dressing over the pasta and vegetables, and toss gently to coat.
  8. Season with salt and black pepper, to taste. Serve chilled.
