Asparagus and Pea Pasta Salad Recipe
Ingredients
- 1 pound farfalle pasta
- 1 pound asparagus, trimmed and cut into 2-inch pieces
- 1 cup frozen peas, thawed
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/3 cup extra-virgin olive oil
- 3 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- Salt and freshly ground black pepper, to taste
Instructions
- Bring a large pot of salted water to a boil.
- Add the farfalle pasta and cook until al dente, following package directions.
- During the last 3 minutes of cooking time, add the asparagus to the pot with the pasta and cook until tender but still crisp.
- Drain the pasta and asparagus, and rinse under cold water to stop the cooking process.
- In a large serving bowl, combine the pasta and asparagus with the thawed peas, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, and garlic.
- Pour the dressing over the pasta and vegetables, and toss gently to coat.
- Season with salt and black pepper, to taste. Serve chilled.
