Autumn Chicken Recipe
Ingredients
- 4 bone-in chicken thighs
- 1 tbsp olive oil
- 1 tbsp butter
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh rosemary, chopped
- 1 sweet potato, peeled and cubed
- 1 apple, peeled and cubed
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F
- Season chicken with salt and pepper on both sides
- Heat olive oil and butter in an oven-safe skillet over medium-high heat, add chicken and cook until golden brown on both sides (about 5 minutes per side). Remove the chicken from the pan and set aside.
- Add onion, garlic, thyme and rosemary to the same skillet and cook until softened and fragrant (about 3-4 minutes).
- Add sweet potato, apple and chicken broth and stir until combined.
- Put the chicken thighs back into the skillet and cover with a lid or aluminum foil.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Remove from oven and let it rest for 5 minutes before serving.
