Autumn Chicken Recipe

Ingredients

  • 4 bone-in chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 sweet potato, peeled and cubed
  • 1 apple, peeled and cubed
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F
  2. Season chicken with salt and pepper on both sides
  3. Heat olive oil and butter in an oven-safe skillet over medium-high heat, add chicken and cook until golden brown on both sides (about 5 minutes per side). Remove the chicken from the pan and set aside.
  4. Add onion, garlic, thyme and rosemary to the same skillet and cook until softened and fragrant (about 3-4 minutes).
  5. Add sweet potato, apple and chicken broth and stir until combined.
  6. Put the chicken thighs back into the skillet and cover with a lid or aluminum foil.
  7. Bake for 25-30 minutes or until the chicken is cooked through.
  8. Remove from oven and let it rest for 5 minutes before serving.
