Baeckeofe with Poultry Recipe
Baeckeofe is a classic French stew made with meat, potatoes, and vegetables. In this version, we will use poultry to make a flavorful and hearty dish that will warm you up on a chilly day.
Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into chunks
- 1 lb boneless, skinless chicken thighs, cut into chunks
- 1 lb potatoes, peeled and sliced
- 2 onions, sliced
- 2 carrots, sliced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup white wine
- 2 tbsp olive oil
- 2 bay leaves
- 1 tsp thyme
- Salt and pepper to taste
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large pan, heat the olive oil over medium-high heat. Add the chicken and brown on all sides. Remove from the pan and set aside.
- In the same pan, sauté the onions and garlic until softened. Add the carrots and sauté for a few more minutes.
- Add the chicken back into the pan along with the chicken broth, white wine, bay leaves, thyme, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
- In a large baking dish, layer the sliced potatoes on the bottom. Pour the chicken mixture over the potatoes.
- Cover with foil and bake for 1 1/2 to 2 hours, or until the potatoes are tender and the chicken is cooked through.
- Remove the foil and continue to bake for 15 minutes to brown the top.
- Remove the bay leaves and serve hot.
