Baeckeofe is a classic French stew made with meat, potatoes, and vegetables. In this version, we will use poultry to make a flavorful and hearty dish that will warm you up on a chilly day.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into chunks
  • 1 lb boneless, skinless chicken thighs, cut into chunks
  • 1 lb potatoes, peeled and sliced
  • 2 onions, sliced
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup white wine
  • 2 tbsp olive oil
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large pan, heat the olive oil over medium-high heat. Add the chicken and brown on all sides. Remove from the pan and set aside.
  3. In the same pan, sauté the onions and garlic until softened. Add the carrots and sauté for a few more minutes.
  4. Add the chicken back into the pan along with the chicken broth, white wine, bay leaves, thyme, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  6. In a large baking dish, layer the sliced potatoes on the bottom. Pour the chicken mixture over the potatoes.
  7. Cover with foil and bake for 1 1/2 to 2 hours, or until the potatoes are tender and the chicken is cooked through.
  8. Remove the foil and continue to bake for 15 minutes to brown the top.
  9. Remove the bay leaves and serve hot.
