Baeckeoffe Recipe
Baeckeoffe is a traditional Alsatian dish that consists of slow-cooked meat, potatoes, and vegetables. It’s a hearty comfort food that’s perfect for cold winter nights.
Ingredients:
- 1 lb. boneless lamb shoulder, cut into cubes
- 1 lb. boneless beef chuck roast, cut into cubes
- 1 lb. boneless pork shoulder, cut into cubes
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 parsnips, peeled and chopped
- 1 leek, sliced
- 4 Yukon Gold potatoes, peeled and cut into thick slices
- 1 cup dry white wine
- 1 cup chicken broth
- 1 bay leaf
- 1 sprig fresh thyme
- Salt and freshly ground black pepper, to taste
Instructions:
- Preheat the oven to 350 degrees F.
- In a large bowl, mix together the lamb, beef, and pork cubes. Season with salt and pepper.
- In a separate bowl, mix together the sliced onion, minced garlic, chopped carrots and parsnips, sliced leek, and potatoes.
- In a large Dutch oven, layer the meat and vegetable mixtures alternately, starting and ending with a layer of meat.
- Add the bay leaf and thyme to the top of the mixture, and pour the chicken broth and white wine over the top.
- Place the lid on the Dutch oven and bake for 3 hours.
- Serve hot with crusty bread and a simple green salad.
