Ingredients

  • 2 lbs beef chuck, diced
  • 1 cup red wine
  • 1 cup beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 2 tbsp flour
  • 2 cups mushrooms, sliced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Season the beef with salt and pepper.
  3. Heat a large skillet over medium-high heat. Add 2 tbsp of butter and sear the beef until it’s golden brown. Remove from skillet and set aside.
  4. Add the remaining 2 tbsp of butter to the skillet, and sauté the onion and garlic until translucent.
  5. Sprinkle the flour over the vegetables, and cook for 2-3 minutes, stirring constantly.
  6. Pour in the red wine and beef broth, and whisk until the sauce is smooth.
  7. Stir in the tomato paste, thyme, bay leaf, and mushrooms.
  8. Add the beef back into the skillet and bring the sauce to a simmer.
  9. Transfer the mixture to an oven-safe dish and bake in the preheated oven for 2-3 hours, or until the beef is tender.
  10. Season with salt and pepper to taste.
  11. Serve hot with mashed potatoes or rice.
