Slow Cooked Beef and Carrots

Ingredients:

  • 2 lbs. beef stew meat, cubed
  • 4 large carrots, peeled and chopped into chunks
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp. tomato paste
  • 1 tsp. thyme
  • 1 tsp. rosemary
  • Salt and pepper to taste
  • 2 tbsp. olive oil

Instructions:

  1. Season beef with salt and pepper.
  2. In a large skillet, heat oil over medium-high heat.
  3. Working in batches, brown beef on all sides until nicely seared. Transfer to slow cooker.
  4. Add onion and garlic to skillet and cook until softened. Add to slow cooker.
  5. Add carrots to slow cooker.
  6. In a bowl, whisk together beef broth, red wine, tomato paste, thyme and rosemary. Pour over beef and vegetables in slow cooker.
  7. Cover and cook on low until beef is tender and vegetables are cooked through, about 8 hours.
  8. Serve hot with crusty bread and a green salad for a complete meal.
