Beet Velouté with Apple Recipe
Ingredients:
- 1 lb. beets, peeled and chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 apple, peeled and chopped
- 3 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tbsp. butter
- Salt and pepper to taste
Instructions:
- Melt butter in a saucepan over medium-low heat.
- Add chopped onion and minced garlic. Cook until translucent.
- Add peeled and chopped beets and chopped apple. Stir all the ingredients until combined.
- Add 3 cups of broth. Cover and cook over medium-low heat until the beets and apples are tender, it will take approximately 20 minutes.
- Using an immersion blender or a regular blender, blend the soup until smooth.
- Return the soup to the pot and add 1 cup of heavy cream. Stir until combined.
- Simmer the soup for an additional 5 minutes until heated through.
- Season with salt and pepper to taste.
Serving Suggestions:
Serve the beet velouté soup in bowls and garnish with chopped parsley. It goes well with a slice of crusty bread or a grilled cheese sandwich. This soup also makes a great appetizer or side dish for a fancy dinner party. Mantra for this soup is “Healthy, delicious and beautifully colorful”.
