Belgian Onion Soup Recipe

Ingredients:

  • 5 large onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon flour
  • 6 cups beef broth
  • 1 cup red wine
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 baguette, sliced
  • 1 1/2 cups grated Gruyere cheese

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the onions and cook for 20-30 minutes, stirring occasionally, until well caramelized.
  2. Add the flour and stir well to combine. Cook for 1-2 more minutes.
  3. Pour in the beef broth and red wine and bring to a simmer. Add thyme, salt, and pepper and simmer for 20-30 minutes.
  4. Preheat the oven to 350°F. Arrange the baguette slices on a baking sheet and brush lightly with olive oil. Toast in the oven for 5-7 minutes, or until golden and crisp.
  5. Ladle the soup into oven-safe bowls or crocks. Top each with several slices of baguette and sprinkle generously with Gruyere cheese.
  6. Place the bowls on a baking sheet and broil on high for 3-5 minutes, or until the cheese is melted and bubbly.
  7. Serve hot and enjoy!
