Bitter Chocolate Soufflé Recipe

Ingredients

  • 5 ounces of bitter chocolate, chopped
  • 2 tablespoons of unsalted butter
  • 4 egg yolks
  • 3 tablespoons of white granulated sugar, divided
  • 5 egg whites
  • Pinch of salt
  • Cocoa powder, for dusting

Instructions

  1. Preheat your oven to 375°F. Grease 4 ramekins with butter and coat them with a dusting of cocoa powder. Set aside.
  2. In a double boiler, melt the chocolate and butter until completely smooth. Remove from heat and let cool for a few minutes.
  3. In a medium-sized bowl, stir together the egg yolks and 2 tablespoons of sugar. Add the melted chocolate mixture and stir until well combined.
  4. In a separate bowl, beat the egg whites and pinch of salt until stiff peaks form. Add the remaining tablespoon of sugar and beat until the mixture becomes glossy and stiff peaks are still present.
  5. Add 1/3 of the egg white mixture to the chocolate mixture and gently fold in, being careful not to deflate the egg whites. Add the rest of the egg whites and continue to fold in until there are no streaks remaining.
  6. Fill each ramekin ¾ of the way full with the chocolate mixture.
  7. Bake in the preheated oven for 16-18 minutes, or until the tops are puffed up and the edges are set.
  8. Serve immediately, dusted with additional cocoa powder.
