Blackberry Cheesecake Recipe

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1/4 cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups fresh blackberries

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well and press into the bottom of a 9-inch springform pan.
  3. In another mixing bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, and beat well after each addition. Stir in vanilla and fold in blackberries.
  4. Pour mixture into prepared crust and bake for 45-50 minutes or until the cheesecake is set but still slightly jiggly in the center.
  5. Remove from the oven and let cool in room temperature for 30 minutes before refrigerating it for at least 3 hours, or overnight, before serving.
