Blackberry Cheesecake Recipe
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup butter, melted
- 1/4 cup granulated sugar
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 2 cups fresh blackberries
Directions
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well and press into the bottom of a 9-inch springform pan.
- In another mixing bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, and beat well after each addition. Stir in vanilla and fold in blackberries.
- Pour mixture into prepared crust and bake for 45-50 minutes or until the cheesecake is set but still slightly jiggly in the center.
- Remove from the oven and let cool in room temperature for 30 minutes before refrigerating it for at least 3 hours, or overnight, before serving.
