Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, at room temperature
  • 2 large eggs
  • 2 tablespoons finely grated blood orange zest (from 2 blood oranges)
  • 1/2 cup fresh blood orange juice (from 2 blood oranges)
  • 1/4 cup whole milk
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 350°F (180°C). Line a 12-cup muffin pan with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the sugar and butter until light and fluffy, about 3-4 minutes. Add the eggs one at a time, beating well after each addition.
  4. Add the blood orange zest and juice to the butter mixture and mix well.
  5. Gradually stir in the dry ingredients alternating with the milk, beginning and ending with the dry ingredients, until the batter is smooth and well-combined.
  6. Spoon the batter into the cupcake liners, filling each cupcake liner about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove the cupcakes from the pan and let cool completely on a wire rack before frosting.
