Blue Cheese Cake with Walnuts and Bacon Recipe

Ingredients:

  • 250g digestive biscuits
  • 100g butter, melted
  • 350g cream cheese, at room temperature
  • 200g blue cheese, crumbled
  • 200ml sour cream
  • 3 eggs
  • 100g walnuts, chopped
  • 6 rashers of bacon, cooked and crumbled

Instructions:

  1. Preheat the oven to 180°C.
  2. Crush the digestive biscuits in a food processor until they resemble fine crumbs.
  3. Add the melted butter to the biscuit crumbs and mix well.
  4. Press the mixture into the base of a 20cm springform cake tin and chill in the refrigerator for 15 minutes.
  5. In a large bowl, beat the cream cheese until smooth.
  6. Gradually add the blue cheese and beat until well combined.
  7. Beat in the sour cream and eggs until the mixture is smooth and creamy.
  8. Fold in the chopped walnuts and crumbled bacon.
  9. Pour the cheesecake mixture over the biscuit base and bake for 45-50 minutes, or until the top is golden and the cheesecake is set.
  10. Allow the cheesecake to cool to room temperature before refrigerating for at least 2 hours.
  11. Once chilled, remove from the tin and serve.
