Boar Terrine Recipe

Ingredients:

  • 2 pounds of ground boar meat
  • 1 cup of heavy cream
  • 1/2 cup of breadcrumbs
  • 2 eggs
  • 1/2 cup of chopped onion
  • 1/2 cup of chopped celery
  • 1/2 cup of chopped carrots
  • 1/4 cup of chopped garlic
  • 1/4 cup of chopped thyme
  • 1/4 cup of chopped sage
  • 1/4 cup of chopped parsley
  • 1/4 cup of chopped rosemary
  • Salt and pepper to taste
  • 4 bay leaves
  • 4 sprigs of fresh thyme

Instructions:

  1. Preheat the oven to 350°F.
  2. Mix together the ground boar meat, heavy cream, breadcrumbs, eggs, and chopped herbs.
  3. In a separate pan, sauté the onion, celery, carrots, and garlic until they are soft.
  4. Add the sautéed vegetables to the meat mixture and mix well.
  5. Season with salt and pepper to taste.
  6. Place the bay leaves and thyme sprigs on the bottom of a terrine or loaf pan.
  7. Press the meat mixture into the pan, making sure to compact it well.
  8. Cover the terrine with foil and place it in a larger baking dish filled halfway with hot water.
  9. Bake for about 2 hours, or until the internal temperature of the terrine reaches 160°F.
  10. Let the terrine cool completely in the pan before removing it.
  11. Chill the terrine in the refrigerator for at least 2 hours before slicing and serving.
