Bordelaise Fish Recipe

Ingredients:

  • 4 fillets of fish (such as salmon or trout)
  • 1/4 cup all-purpose flour
  • 4 tablespoons unsalted butter
  • 4 cloves of garlic, minced
  • 1/2 cup dry red wine
  • 2 tablespoons tomato paste
  • 1 cup fish stock
  • 2 sprigs of fresh thyme
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C). Rinse the fish and pat them dry with paper towels.
  2. Dredge each fillet in the flour, shaking off any excess. Set aside.
  3. In a large oven-safe skillet or Dutch oven, melt the butter over medium-high heat. Add the garlic and cook until fragrant, about 1 minute.
  4. Add the fish fillets to the skillet and cook until browned on both sides, about 3-4 minutes per side. Remove from the skillet and set aside on a plate.
  5. Add the red wine to the skillet and stir to scrape up any brown bits. Cook until the wine has reduced by half, then add the tomato paste, fish stock, and fresh thyme. Bring the mixture to a simmer.
  6. Return the fish fillets to the skillet, spooning the bordelaise sauce over them. Place the skillet in the preheated oven and bake for 10-15 minutes, until the fish is cooked through and the sauce is bubbly.
  7. Serve hot, garnished with fresh thyme and a side of your choice.
