Braised Partridges with Bacon and Cabbage

Ingredients:

  • 2 partridges, quartered
  • 4 bacon slices, chopped
  • 1/2 onion, finely chopped
  • 1 small head of cabbage, cored and chopped
  • 1 cup chicken stock
  • 1/2 cup white wine
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F.
  2. Season the partridges with salt and pepper.
  3. In a large Dutch oven, heat the olive oil and butter over medium-high heat.
  4. Sear the partridges until browned on all sides, about 3-4 minutes per side. Remove from the Dutch oven and set aside.
  5. In the same Dutch oven, add the bacon and cook until browned, about 3-4 minutes.
  6. Add the onion and garlic and cook until softened, about 2-3 minutes.
  7. Add the chopped cabbage and cook until wilted, about 5 minutes.
  8. Add the chicken stock, white wine and thyme to the Dutch oven and stir to combine.
  9. Bring the mixture to a simmer and then add the partridges back into the Dutch oven.
  10. Cover and transfer the Dutch oven to the preheated oven.
  11. Braise the partridges for about 45 minutes, or until cooked through and tender.
  12. Serve hot with some of the cabbage and bacon mixture on top of each partridge quarter.
