Braised Partridges with Bacon and Cabbage
Ingredients:
- 2 partridges, quartered
- 4 bacon slices, chopped
- 1/2 onion, finely chopped
- 1 small head of cabbage, cored and chopped
- 1 cup chicken stock
- 1/2 cup white wine
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 tsp thyme
- Salt and pepper to taste
Instructions:
- Preheat the oven to 350°F.
- Season the partridges with salt and pepper.
- In a large Dutch oven, heat the olive oil and butter over medium-high heat.
- Sear the partridges until browned on all sides, about 3-4 minutes per side. Remove from the Dutch oven and set aside.
- In the same Dutch oven, add the bacon and cook until browned, about 3-4 minutes.
- Add the onion and garlic and cook until softened, about 2-3 minutes.
- Add the chopped cabbage and cook until wilted, about 5 minutes.
- Add the chicken stock, white wine and thyme to the Dutch oven and stir to combine.
- Bring the mixture to a simmer and then add the partridges back into the Dutch oven.
- Cover and transfer the Dutch oven to the preheated oven.
- Braise the partridges for about 45 minutes, or until cooked through and tender.
- Serve hot with some of the cabbage and bacon mixture on top of each partridge quarter.
