Ingredients

  • 1 pound coumulels
  • 1 cup all-purpose flour, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 1 cup seasoned breadcrumbs
  • 1/2 cup vegetable oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Clean the coumulels and cut them into bite-sized pieces.
  3. In a shallow dish, mix 1/2 cup of flour, salt, and black pepper.
  4. In another dish, beat the eggs.
  5. Place seasoned breadcrumbs in a third dish.
  6. Coat each coumulel piece in flour, then dip in beaten eggs, and roll in seasoned breadcrumbs until fully coated.
  7. Heat vegetable oil in a large skillet over medium-high heat. Fry coumulels in batches for 2-3 minutes on each side or until golden brown. Remove from the skillet and place on a paper towel-lined baking sheet to remove any excess oil.
