Breakfast Cookies Recipe

Ingredients:

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (room temperature)
  • 1/4 cup raisins
  • 1/4 cup chocolate chips
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 egg
  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, whisk together oats, flour, cinnamon and baking soda. Set aside.
  3. In a separate large mixing bowl, cream butter, sugar, egg and vanilla extract until light and fluffy.
  4. Mix the dry ingredients with the wet ingredients until combined.
  5. Add in raisins and chocolate chips and fold into the dough.
  6. Take about 3 tablespoons of the dough and form it into a ball. Flatten it down slightly and place on the baking sheet.
  7. Bake for 12-15 minutes or until lightly golden.
  8. Let cool for 5 minutes before serving.
