Breakfast Cookies Recipe
Ingredients:
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter (room temperature)
- 1/4 cup raisins
- 1/4 cup chocolate chips
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1 egg
- 1 tsp vanilla extract
Directions:
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a medium mixing bowl, whisk together oats, flour, cinnamon and baking soda. Set aside.
- In a separate large mixing bowl, cream butter, sugar, egg and vanilla extract until light and fluffy.
- Mix the dry ingredients with the wet ingredients until combined.
- Add in raisins and chocolate chips and fold into the dough.
- Take about 3 tablespoons of the dough and form it into a ball. Flatten it down slightly and place on the baking sheet.
- Bake for 12-15 minutes or until lightly golden.
- Let cool for 5 minutes before serving.
