Brioche Shuttles Recipe

Ingredients

  • 1 cup warm milk
  • 2 tablespoons active dry yeast
  • 1/4 cup granulated sugar
  • 6 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 4 eggs
  • 1/2 cup unsalted butter, softened
  • 1 egg beaten with 1 tablespoon water

Instructions

  1. In a large mixing bowl, combine warm milk, yeast, and sugar. Stir until yeast is dissolved. Let sit for 5-7 minutes.
  2. Add the flour, salt, eggs, and softened butter to the bowl. Mix with a wooden spoon until dough starts to come together.
  3. Knead the dough by hand on a floured surface for 8-10 minutes. The dough should be elastic and smooth.
  4. Place the dough in a greased mixing bowl and cover with a damp towel. Let rise in a warm, draft-free area for 1 hour.
  5. Punch down the dough and cut into 12 equal pieces. Shape each piece into a round ball and place on a baking sheet lined with parchment paper. Let rise for another 30 minutes.
  6. Preheat oven to 375°F.
  7. Brush each ball with the egg wash mixture.
  8. Bake for 18-20 minutes or until the brioche shuttle is golden brown.
